BookDr. Asumendi-Fillmore earned an undergraduate degree in restaurant management at Idaho State University and a master´s Degree in Human Nutrition from the University of Nebraska – Lincoln before becoming a registered, licensed dietitian through the ADA (American Dietetic Association). While earning her doctorate in adult learning and leadership from the University of Idaho she researched and authored the book "Basques of Boise: Adult Dietary Culture and Tradition". Dr. Asumendi-Fillmore works for USDA Child Nutrition Programs as Idaho State Director and teaches nutrition and healthcare courses at the University level.
